Today's lunch is one of my favorite! I have found this website "naturallyella.com", and between all the mouth-watering healthy recipes out there, this dish has caught my eye; Avocado and Chickpea Salad <3... I thought to myself, this is such an easy healthy dish that I can easily prepare it the night before I go to bed for lunch the next day. Not forgetting, it has all the nutritions needed as a proper meal for lunch.
Within the ingredients of this recipe is; onions. I am not a big fan of raw onions, as it's very sharp and strong in taste, so, instead of onions I have replaced it with the sweet corn, sprinkle of raisins and pine nuts.
Some facts about the major ingredients of this dish are as the following: the avocado is considered as one of the healthiest foods in the planet because they contain 25 essential nutrients, also is a great source of protein and fibre. As for the chickpeas, it is low in fat, high in fibre, high in protein and minerals, and has a yummy buttery texture and a great nutty taste.
