Another Day in Paradise


I know I have been a very veryy verrrryyyy bad blogger! I am so sorry for not updating my blog and being MIA for like a month or so!! But hey, I'M BACK!! 

If you're following me on Instagram, you would know that I have been on a little vacation with my hubby to Phuket and Koh Samui -Thailand-! It was one of our best holidays ever, it was super fun and amazingly beautiful!

In phuket we stayed in Centara Grand beach resort, very beautiful and family friendly -If you want to bring your kids along-. It has 4 swimming pools (plus the lazy river, water-slides,  waterfalls, and lots of pool activities), they also have a direct access to the beach!

Phuket was fun and a lively place to go to, Patong was one of the main touristic attractions in Phuket that is known to have a crazy nightlife that begins from 9 p.m onwards, you can watch live bands, fun shows, and local shopping stalls are open till 4 a.m.!

My favorite drink was the coconut water, super hydrating and yummy!

We took a full day tour to Phi Phi Island from the hotel, but you can get a waaaaay more cheaper tours anywhere there, but we thought that if we take it from the hotel it would be a VIP-ish cleaner version from the ones you get from the streets. And it was actually very neat and just like what we expected.

Phi Phi Island tour was the far best place we have ever been to, you can enjoy the sun, beach, and scenery! It has clear blue water, waves were gentle, white sand, and soft breeze, what else could we ask for?! And we got to see one of Phi Phi islands "Maya Bay" where the movie "The Beach" was filmed.

I still can't believe that I swam here in this breathtaking crystal blue sea!!! Unforgettable indeed! ^ ^


In Samui we stayed in the Six Senses, it's more of a relaxing and very private which is suitable for couples getaway and honeymoons. It has this humongous beautiful infinity pool with breathtaking scenery! There is only one thing that I really didn't enjoy much in the hotel which was the way to the villas; they are all situated over the hill, so we had to walk up and down the hills to reach our villa, and I'm telling you, it gets really creepy at night -mostly to me, cause I really HATE and scared of insects and pests-. Other than that, it was magical and a beautiful true experience for both of us!

We stayed in an ocean front pool villa suit in the Six Senses, it's a pretty big and spacious villa consisted of one bedroom, a living room, walk-in-closet, 2 bathrooms with an indoor and outdoor showers, a private pool, and a dining area by the pool. The living room could be transformed into another bedroom as the sitting area is pretty BIG and comfy!

Our vacation to Thailand was a wonderful experience, the only downfall that I mainly experienced and bothered my husband about was the insects and mosquitoes, they were EVERYWHERE! But all in all, it was a phenomenal holiday, very relaxing with heavenly scenery. ^ ^

Couscous Salad with Roasted Cherry Tomatoes and Mushroom


Couscous is one of my favorite variety of starchy food, and I love to incorporate it mostly in my salads -It is also known that couscous is among the healthiest grain-based products!-.

Here is what you will need to prepare this salad:

- A drizzle of olive oil
- A pinch of garlic powder
- 1/4 cup of couscous
- 1/3 cup or about less than a half cup of water
- 1/4 cup cherry tomatoes (Halved)
- 3 mushrooms (Halved)
- A small bunch of spinach

- Drizzle the cherry tomatoes and mushrooms with some olive oil, pinch of salt and pepper and pop them into the oven for about 10 minutes 180 c.

- Until they get roasted, in a saucepan, bring water to boil. Add salt and stir, then add couscous and directly remove from heat and let it sit for about 5 minutes. Couscous should absorb all the water, fluf with fork and sprinkle with garlic powder.

Little Tip: You can add vegetable stock instead of  water to add more flavor to the couscous!

- Mix the spinach leaves along with couscous, cherry tomatoes and mushrooms and serve immediately.
